Baked Beans my style

Soak over-night navy beans 3 cups or so  (change the water if you can 2-3 times)
a can of bean medley (just mixed beans, I use Mr. Goudas 9 Bean Mix Symphony)
caramelize two sliced and halved onions
6-8 slices half fried bacon for topping
1 ½ cups catsup
1/4 cups mustard
1/4 cups BBQ sauce
1/4 molasses
1 teaspoon red pepper flakes
1 teaspoon sea salt
 ½ cups honey (local Joe Valas honey is the very best!)
 ½ cups REAL brown sugar (the stuff in the carton not the cheap bagged golden stuff)

 

Soak beans for at least 4 hours prior to cooking them CHANGE THE WATER
Boil the beans in water for an hour or so to soften them up, rinse them yet again & mix up the slop then in a roasting pan, top with the bacon & cook on 350 for up to 60-90 minutes, top up with water and giver a stir if needed, turn the temp down and cookem for another bit until they're tender.
Reheating the next day  is when they're BEST

 

My uncle Jerry made these beans buried in the sand bank of the Ottawa River cooked on fired hot rocks over night, needless to say they were very good!

 

Note: If you freeze these, they'll lose their musical traits completely!
